Roast John Dory fillet, milky pear sauce, ginger risotto.

 

Ingredients :

 

800 g John Dory  fillet 
800 g risotto rice
50 g crystallised ginger or 100 g raw ginger 
25 cl milk
2/2 canned pears in syrup (small can) 
1 chopped onion 
salt, pepper
20 g butter / olive oil 
10 cl white wine /1l white stock 
various herbs for garnishing

PREPARATION :

 

Risotto :

Place the butter in a saucepan with the chopped onion. Cook the onion until it sweats without going brown and add the rice. Mix it until it is translucent. Add the white wine, simmer to reduce for 5 to 10 min and pour enough white stock to cover the ingredients. Reduce the heat and do not stir. When no more liquid is left, add the rest of the stock until the risotto is fully cooked. In the meantime, grate the ginger and parmesan into the risotto. When it is ready, check the seasoning and keep it warm.

Milky pear sauce :

Pour the milk into a saucepan with the canned pears cut into pieces and leave to cook. Mix the sauce in a mixer and then sieve it. Season with salt and pepper and keep it warm. 

John Dory fillet :

Fry the John Dory fillets in olive oil and cook them well on the skin side. Season with salt and pepper. Take a plate and mould a circular mound of rice in the middle. When the John Dory fillets are ready, put them on a clean tea towel and drain them before putting on the rice.
