Matelote is an age-old Alsatian dish, typical of the Ried plain. Traditionally, it was baked in white Alsace wine and served with noodles. In Alsace, it is made with freshwater fish: pike, eel, zander, tench, perch and burbot (now very rare).
Around 20 restaurants in the Ried plain, between Drusenheim to the north and Illhaeusern to the south, offer you this original, succulent dish.
